Summer News

It is time and past time to bring you news and comments. In general there is interest in both the USA and EUROPE in organic food and getting rid of transfats. This information is wide and deep. It needs careful consideration. The information is voluminous and compelling.

With reference to transfats one of the best sources for information is The Weston A. Price Foundation. Sally Fallon is the chief executive. She is closely aligned with Dr. Mary Enig..a professor close to my age who has been in the fight for truth about fats and oils for many years. Work authored by both of them is on the foundation website. The work, The Oiling of America, is on that site and is quite a large file to download. I think this work is very important.

Simply put, cooking fresh and organic is the safest way to go. If you search your area for organic garden and meat producers and send the list to me we could craft an information file of availability.

It is time to refresh us with reference to items we need in the pantry to prepare healthy dishes. The place to put this list is in the recipe section. Click here.

There is no lack of articles concerned with food production in Europe and the USA. Further, information about medical information and chemical dangers is given in the many sources we all encounter. So, there is much to share. Let's work together to make this exchange viable.

Pantry List

Some of the ingredients used in the recipes are different from the ones we usually use. This is designed to help you with this diet.

xylitol - a sweetener that kills fungi rather than feeding them.

  • You will often find xylitol, a little honey and some liquid stevia in a recipe. This helps improve the sweetness in a recipe.

  • Source - Health food store or Long Life Unlimited

arrowroot - an acceptable thickener

fruit concentrate (unsweetened) - a good source of antioxidants and good phytochemicals.

  • Pour up a portion of this for the refrigerator and store the rest in your freezer.

  • Source - Brownwood Acres

stevia clear - liquid stevia-the brand I use is Sweet Leaf

oil of cinnamon - one trade name is Cinnamol (North American Herb & Spice)

other flours - All forms of wheat flour feed fungi.

  • You will find tapioca flour, coconut flour, flax flour, almond flour, etc. in the recipes.

  • Source - Most of these can be ordered from Bob's Red Mill if you cannot find them in your supermarket or health food store.
