Summer's End is in Sight... Though It's Dying Hard in Texas... It's HOT

The frenzy to decide who is to blame for the obesity epidemic is at a fever pitch. I review a number of food newsletters for the food industry in the USA and Europe. The blame points from food elements such as transfats to marketing practices. By and large I doubt that consumers understand transfats nor are they aware of how strongly marketing practices influence their food choices. There is plenty of blame to go around. Each element in the brou-ha-ha has its effect.

The big idea for me is that there is no attention given to the real cause. Fungi are the driving force in our food choices. The most popular choices feed fungi, the unavoidable organism. Fungi fuel our urges for empty carbohydrates...THEIR favorite food. My personal experience and others who have talked to me is a shrinking of the craving for empty calories when the diet starves fungi.

Time and space are not available to cover the many facets of this picture. A single focus would be an effective response to this cacophony of blame... an antifungal diet. Starving fungi helps the immune system to build one's health.

I want to keep working on effective ways to help you channel your personal and family food practices into more healthful directions.

Some ideas are zooming around in my head.
* Mixes for trying new ingredients and for time stressed cooks
* More healthy, delicious snacks
* Desserts for a spark to the diet
* Flavorings to light up meat and vegetables
* Other ideas
